Step 1: Gather Your Ingredients

  • Rice: Use cold, leftover rice for the best texture. Freshly cooked rice tends to be too soft, making the dish mushy. If you only have fresh rice, spread it on a tray to cool it quickly.
  • Vegetables: Common veggies include carrots, peas, onions, and green onions. You can also add bell peppers, mushrooms, or any other vegetables you like.
  • Protein: Options like eggs, chicken, shrimp, or tofu can be added for extra substance.
  • Soy Sauce: Adds the essential salty umami flavor.
  • Garlic and Ginger: These aromatics enhance the dish with depth of flavor.
  • Oils: Use sesame oil for a nutty flavor, and a neutral oil like canola or vegetable oil for cooking.

Once your ingredients are ready, you’re set to begin the cooking process.

Step 2: Cook the Protein (If Using)

If you’re adding protein like chicken, shrimp, or tofu, cook it first to ensure it’s fully cooked before mixing it with the other ingredients.

Heat a tablespoon of oil in a wok or large skillet over medium-high heat. Add your protein and cook until it’s browned and cooked through. 

For chicken, this typically takes about 5-7 minutes, while shrimp or tofu will take less time. Once done, transfer the protein to a plate and set it aside.

Step 3: Stir-fry the Vegetables

In the same wok or skillet, heat another tablespoon of oil and add your chopped garlic and ginger. Stir-fry them for about 30 seconds to release their aroma. 

Then, add your vegetables. If you’re using firmer vegetables like carrots or broccoli, cook those first until they begin to soften before adding softer vegetables like peas or bell peppers.

Cook the vegetables for about 3-5 minutes, stirring frequently, until they’re slightly tender but still crisp. You don’t want them too soft, as they should retain a little bite for texture.

Step 4: Add the Rice and Eggs

Once your vegetables are cooked, it’s time to add the cold rice. Break up any clumps with your fingers before adding it to the pan. Push the vegetables to one side of the wok to make room for the rice.

Increase the heat to high and stir-fry the rice with the vegetables for a few minutes. The goal is to heat the rice through and develop a bit of crispy texture. This is what makes fried rice distinct from regular steamed rice.

At this point, if you want to add scrambled eggs, push the rice to one side of the pan, add a little oil to the empty side, and crack the eggs into the pan. Scramble the eggs until they’re fully cooked, then mix them into the rice.

Step 5: Season and Serve

Finally, it’s time to bring everything together with seasonings. Pour in a few tablespoons of soy sauce, stirring well to coat the rice and vegetables evenly. Taste and adjust the seasoning as needed by adding more soy sauce, salt, or even a dash of hot sauce if you like a little heat.

If you’ve cooked protein earlier, add it back to the pan and toss everything together. Stir in some sesame oil for a finishing touch of flavor. You can also garnish with chopped green onions or cilantro for freshness.
