Paris-Brest

It is one of the famous pastries of France made of choux pastry and a praline-flavored cream topped with flaked almonds and sugar. It was created in 1910 by Louis Durand, patissier of Maisons-Laffitte, at the request of Pierre Giffard, to commemorate the 1,200 km Paris-Brest-Paris bicycle race, meant to resemble the bicycle wheel.

It has a rich, creamy mixture of praline paste and pastry cream, giving the Brest a unique nutty, and sweet flavor. Moreover, it is mainly made in a large ring shape but can be sliced in a smaller portion according to the choice. Paris-Brest is different due to its historical significance and distinctive shape.

Tiramisu

Tiramisu originated in Italy and its taste makes it a standout dessert, made of ladyfinger pastries dipped in coffee. It is mainly layered with a whipped mixture of eggs, sugar, and mascarpone and flavored with cocoa. The Tiramisu recipe is not found in cookbooks before the 1960s.

A common variant involves soaking the savoiardi in alcohol, such as Marsala wine, amaretto, or a coffee-based liqueur. The original tiramisu made at Le Beccherie was circular. Additionally, it gives a rich and smooth texture that is less tangy than cream cheese used in other desserts.
